What’s On The Menu?
Wood Fired Pizza
Sunny Side Up Pizza – As usual, we start this pie with a base of homemade creme fraiche from local cows (I know, right?) and then give it a few slices of sweet sausage from Autumn Harvest Farm in Romulus, NY. After that we add a three cheese blend. Then some onion scapes (from the garden). And – living up to its name – we top this pizza off with a farm fresh egg! [$12.00]
Summer Squash and Basil Pizza – We also start this pizza with a base of homemade creme fraiche and then comes locally grown yellow and green summer squash (grated) and then… a three cheese blend… and then… basil (from the garden). Oh and, when we’re done firing this pizza, we finish it with a touch of gray sea salt. [$11.00]
Wine
Try the Cayuga Ridge Estate Riesling (which recently won Germany’s Best Riesling of the New World 2010 award) or your favorite red or white.
By the glass [$6.00]
For our 2011 season opening (May 14th and 15th) Mary Jane has decided to bring back both a favorite and something new.
Wood Fired Pizza
Proscuitto Pizza – As usual, we start this pie with a base of homemade creme fraiche from local cows (I know, right?) and then slightly smother it in a delightful combination of thinly sliced prosciutto, freshly grated parmesan and onion scapes (from the garden). And for a finishing touch after firing, a drizzle of local fig balsamic vinegar. [$12.00]
Asparagus Pizza – We also start this pizza with a base of homemade creme fraiche and then comes locally grown asparagus from Fink Farms (in Ovid, NY) and then… freshly grated parmesan… and then… onion scapes (from the garden). Oh and, when we’re done firing this pizza, we hope you can taste the touch of garden fresh mint that we finish it with. [$11.00]
Desserts (from Sarah’s Pattisserie)
Until they run out… Chocolate Flourless Cake or Sour Cherry Galette [$7.00]

We are incredibly excited to be teaming up with Cayuga Ridge Estate Winery, Farmshed CNY, and Fink Farms for the first of our seasonal wine dinner series in 2011, Spring Into New Beginnings.
The Spring dinner event includes casual yet informative discussion with Tom and Susie Challen, Cayuga Ridge Estate’s owners – in the cellar and in the vineyard.
Also, throughout each course, Tom and Susie will be joined by their daughter Mary Jane and Michelle Fink from Fink Farms, and Neil Miller from Farmshed CNY, for commentary on the chosen food pairings.
Additional wine series dates – for summer and fall – will be announced shortly.

Then we add diced peppers (also locally sourced) and top it off with a three cheese blend of NY cheddar, mozzarella and provolone. [$11.00]
Suggested Wine Pairing: Cayuga Ridge Estate Cabernet Franc
Fall Harvest – We start this wood fired pizza with a base of locally sourced caramelized onions and chevre from Lively Run. Then we add to that dollups of an apple cider seasoned butternut and acorn squash puree (seriously,it’s good). And when we’re done firing it, we finish this pizza with sweet drizzles of homemade cider reduction (from Kingtown Orchards cider in Trumansburg, NY). [$10.50]

We’ve received a lot of questions recently about our fall/winter hours…
The Copper Oven at Cayuga Ridge Estate Winery will be open regular hours (Saturdays and Sundays, 11:30 AM – 5:30 PM) through November 7th, 2010.
After that we’re done for… a little while.
What’s coming in 2011, you ask?
Well, if you haven’t heard (or noticed) MJ is due to have a baby boy at the end of December (see a picture of the pregnant lady below)! And we’ll be working through the winter and early spring to make a few upgrades to our dining experience. More details to be posted on our blog on both topics – please stay tuned.
Nonetheless, we plan reopen for the 2011 season starting in late April or early May (i.e., whenever the Cayuga Wine Trail kicks off the season with its annual Wine and Herb Fest)!
Before then, we hope you come to get your wood fired grub on…
