Choice grade steaks will be priced higher than Select grade steaks, but they are the steak grade you will most commonly reach for. Prime grade steak is the pinnacle of perfection.

Know When It’s Done

Knowing when a steak is done (depending on how you want it done!) is a crucial part of grilling the perfect steak. While the chef’s standard level of doneness for steak is medium-rare, there are six main levels of doneness. You should be able to tell when a steak is done by its feel and look alone, but the internal temperature can help you out if you’re unsure.

When grilling a steak, it’s important to work on internal temperature and not cooking time since the size of the steak will cause the times to differ.

  • Blue Steak will have a bright red appearance and an internal temperature of 110°F
  • Rare Steak will have a red and shiny appearance and an internal temperature of 120–130°F
  • Medium Rare Steak will have a deep red appearance and an internal temperature of 130–135°F
  • Medium Steak will have a light pink appearance and an internal temperature of 135–145°F
  • Medium Well Steak will have a light pink appearance with greying on the edges and an internal temperature of 145–155°F
  • Well Done Steak will have a no pink and an internal temperature of 155°F and up
